Chicken, Chickpeas & Vegetable Curry

  • 4 Chicken thigh fillets cut into cubes
  • 1 tablespoon Miris Curry Paste
  • 1 small Onion finely diced
  • 2 Sweet Potatoes cut into cubes
  • 2 Potatoes cut into cubes
  • 1 cup of chopped Green Beans
  • 1/2 cup of diced eggplant
  • 200g of canned Tomatoes - diced
  • 400g of canned Chickpeas 
  • 200g Coconut Cream/Milk
  • Salt to taste



In a medium pan on medium heat add oil, chicken, onion, salt to taste and Miris Curry Paste. When the chicken is coated /slightly cooked, add all other ingredients and simmer for 20 mins. 

- You can serve this with steam rice, raita (yogurt & cucumber) and papadums. 
- Alternatively, with some naan bread 
- Additionally, add a side of aragula and/or spinach salad
